Pickled Beet & Goat Cheese Burgers
Just as the title says, a burger with a slice of regular goat cheese and a slice of pickled beets. We added lettuce and that is it! Delicious! An amazing combination. I also like beet and goat cheese in salads. The beets are Eric's mom's famous pickled beets. We paired it with mixed veggies with a bit of balsamic vinegar, olive oil, and salt & pepper and threw them into a grill basket for about 15 min.
